The "Cooking with tea" workshop at the Chaparra Eco Lodge - an illustrated story

Labels: , , ,

Last saturday I had the pleasure to welcome a small group of women, at
the beautiful Chaparra Eco Lodge in the Alpujarras mountains, for the
"Cooking with tea" workshop. As soon as you arrive in this magical place,
you feel the peacefulness and quietness....very appropriate for a cooking course!

We started making Earl Grey madeleines. As usual, I ask participants
to work in pairs to make the experience more fun and friendly.

Sometimes easy and simple recipes like madeleines can be daunting. I had just explained
to the lovely and eager participants that the little bump on the madeleines is produced by
a thermal shock. And when we took the cakes out of the oven, we all laughed because in fact,
the supposed thermal shock didn't seem to happen as the madeleines kept coming out flat!
Never mind, they had a fluffy texture and tasted very nice with the subtle Earl Grey flavor.
For this course, I used exclusively teas from Palais des Thés, my all time favorite tea supplier.

We then carried on with the matcha and parmesan biscuits.

I always feel a bit nervous to use an oven I'm not familiar with and
especially as this was a gaz oven. But as our lovely hostess Karin, said
"No drama!"...with a little bit of attention, our matcha biscuits didn't burn.

After making those two recipes, in which tea is added directly as an ingredient I then explained
how to make a white chocolate ganache infused with Thé des Moines a delicious fragrant tea
by Palais des Thés, based on a Tibetan recipe.
The day before I made choux to fill them with this tea flavored ganache which we had
for our well deserved tea time.

As I was about to carry on with a tea sauce to serve with fish, there was
a general mutter of protest.....the fish could wait but please let's have tea now!
So, we all sat on the sunny terrace by the pool and had more choux and shared
the chocolate tart flavored with Oolong tea which I had prepared the day before.
We also drank tea, of course, chosen from a selection of green teas, black teas and Oolong tea.

At the end of the course, each participant packed up her baking goods to take
home and also received a gift bag with six samples of different teas from

Although the course was scheduled to end at 7pm, it was too tempting
to stay on and enjoy those views.

Little corners of relaxation everywhere

Des petits coins-repos partout
Karin, our lovely hostess runs this place as a glamping site and
set up two yurts which you can rent.

And how about this view which greets you in the morning....Cool, non?

A big thank you to the lovely ladies who made up their way
and joined the course and to Karin, our lovely hostess for her enthusiastic support!

some recipes...sweet and savory.

We will make matcha & parmesan biscuits
and Earl Grey madeleines.

Haremos galletas de matcha & parmesan
y madalenas con Earl Grey.
I will also make a demonstration of my very own recipe of
a white chocolate ganache flavored with Thé des Moines tea from Palais des Thés.
This subtle and fragrant tea has been created by Palais des Thés after a Tibetan recipe
After various trials I finally succeeded to obtain a wonderfully flavored ganache
and it's my pleasure to share my recipe with you in this course.

All the teas we will be using are from my favorite tea brand
Palais des Thés. Not that they sponsor me to run this workshop but I just love
their teas and their business conduct.

And this is where we will be....

Y aquí estaremos...
Yes! In this little patch of paradise perched above Lanjaron in the Alpujarras mountains.

A tranquil Sunday lunch in a charming Andalusian country house

Labels: , , ,

A visit to my friend José Luis, whom I call the Andalusian poet-gentleman farmer
is always a joy. He lives in his old family house, tends his vegetable garden,
makes his own jams and honey. He repairs the roof from time to time; the old
lady needs lots of attention but as we say here "poco a poco", little by little,
as José Luis is a true adept of the art of slow living. That day, his brother Paco was
there too. I had come with a group of friends and Paco showed us proudly his collection
of bonsaïs. He's been growing them since 25 years and his voice is filled with love
when he speaks about his babies. So touching.....

Paco's bonsaïs thrive next to a magnificent jasmine tree. They all have a person's name.
Paco's never been to Japan but he knows so much about the art of bonsaï and
Japanese culture, it seems he already knows the country so well.

José Luis took us to the garden to pick up some broad beans, fresh onions and
clementines.

The kitchen is truly the heart of the house. I have memories of long
animated conversations around the table by the fireplace.

Here, José Luis is preparing a traditional salad, called "remojon":
oranges, a few raw broad beans, a spring onion cut very thinly, a few shreds of
cold cod and some black olives. He then seasons it with a bit of  olive oil and
sprinkles some clementine juice on it and a bit of salt. All the ingredients, except
the black olives and the cod come from his garden. The result is so
delicious and refreshing.

I had brought a spinach quiche and Paco served his homemade beer
and of course there are no tapas without a good chorizo!

We were eight that day and soon the little ktichen was filled with laughters
as José Luis was mimicking a Spanish humorist.

The old electricity meter always makes me smile.
It's as if time stands still here. I reckon it sometimes has its charms.

Spring

Labels: , ,

At the time I'm writing this post, the church bells are ringing, it's the
end of the Semana Santa and the whole village has been celebrating
with processions and the traditional "hornazo" bread.
I baked a brioche yesterday which between visits didn't last one afternoon.
But this rather pleases me. Otherwise where is the joy?
When I bake, I'm never in a bad mood, on the contrary it's something
I truly love to do and then sharing with others is the best part.

With Spring coming, there are also some changes in my life I thought
I should mention here: I have a new love in my life.
It's been a while since my ex-boyfriend and I decided to part.
I reassure you, we remain good friends and I'm grateful for this.

It is quite an adventure I'm embarking on and I will divide my time
between my beloved Andalusia and a country way up North.
It's all thrilling and challenging but I'm so eager to embrace this change in my life.

Love love love

We're having a cold rainy day here in Andalusia
but my heart is kept warm.

May you have all a Happy Valentine's day
with your loved ones!

Coffee table styling exercise for Chairish

Labels: , ,

A few days ago I was introduced to Chairish, an online marketplace for vintage furniture,
who invited me to style a coffee table chosen from their collection however I wanted.
It's a première for me, as I've never been approached before for this type of styling exercise
and it was great fun indeed.

So I picked up the coffee table below which I quite like for its rustic
and industrial look. Above are the elements I would lay on this coffee table: wooden boards,
a wooden wine crate to display some favorites books and magazines. A touch of green
to bring nature inside with olive tree twigs and rosemary. The wine crate is also great to
put small objects like keys or a watch. Basically I chose 3 materials, wood, brass and
ceramics with a touch of gold. In winter, wood is always a favorite as it brings up warmth
and the golden touch of the brass and the tiny ashtray adds a sophisticated note. The lucky number 7
and the framed card which represents an architectural drawing by Thomas Jefferson are only
for decorative purpose. But with a glass cover on it the frame can also be a coaster.
I also added a small metal Moroccan lantern for a soft and warm light
on long winter evenings.
You like my styling?
In fact, I could totally see this coffee table in my own home!

Paris of course is always a good idea....

I was so happy to welcome 2016 in Paris and it's always with a pang
of emotion that I pass by my former address, rue Vieille-du-Temple in the Marais.

Nostalgia ? Yes
Regrets ? No
But it's always nice to come back and especially to wander through the Parisian
traffic, with my cousin on his scooter. I had limited time to visit shops but,
still we went to Merci, where the cute little red Fiat always sits pretty in the courtyard.

Next to Merci concept store, the super tiny Boot Café is nested behind this pretty blue
façade of an old shoemaker workshop. With just 2 or 3 tables inside, this cute mini café
fills up very quickly. That day, the coffee machine didn't work but never mind we had tea and
a delicious lemon cake.

I like the jasmin plant on the counter

Hope you're all starting 2016 with good vibes and positive energy.
I wish you only the best!

J'espère que vous démarrez tous 2016 avec
de bonnes ondes et une énergie positive !
Je ne vous souhaite que le meilleur !
